The Prep Cook provides support for the kitchen staff by preparing ingredients and assisting in the overall food preparation process. This role helps ensure food quality and the timely delivery of dishes to guests.
  • Work closely with kitchen staff to complete orders by gathering necessary ingredients and distributing them to appropriate cooking stations.
  • Retrieve items from pantry, refrigerator, or freezer and portion ingredients as needed.
  • Assist line cooks by providing clean utensils, ingredients, and other support as required.
  • Organize and label food items in storage closets, refrigerators, and freezers.
  • Wash, chop, and sort ingredients such as fruits, vegetables, and meats.
  • Measure and prepare quantities of seasonings and other cooking ingredients.
  • Chop ingredients and prepare items for cooking.
  • Perform basic cooking tasks such as parboiling food, reducing sauces, and completing initial steps in various recipes.
  • Sanitize workstations during and after service to maintain cleanliness and food safety standards.
  • Complete tasks in order according to the prep list provided by the Head Chef or kitchen manager.
  • Label and stock all ingredients on easily accessible shelves.
  • Adhere to all relevant health, nutrition, and sanitation regulations.
  • Review storerooms, walk-in refrigerators, and freezers to monitor inventory and identify low-stock items.
  • Maintain records of remaining inventory and provide supply lists to management for ordering.
  • Assist with unloading food deliveries and properly storing items.
  • Take out trash and maintain a clean and sanitary kitchen environment.
  • Assist other kitchen staff throughout the day as needed, including dishwashing and cleaning floors.
  • Track ingredient inventory and collaborate with kitchen management regarding resupply needs.
  • At the end of each shift, assist with cleaning duties including washing dishes, sanitizing kitchen surfaces, mopping floors, and returning clean utensils and dishes to proper storage areas.
Qualifications:
  • High school diploma or GED required.
  • Strong manual dexterity and ability to operate cutting tools quickly and safely.
  • Knowledge of industry-standard cooking and food preparation practices.
  • Familiarity with safe and sanitary food handling procedures.
  • Ability to obtain food handler certification.
  • Basic math skills with understanding of cooking measurements.
  • Strong sense of smell and taste.
  • Excellent organizational, time management, and multitasking skills.
  • Strong teamwork and collaboration abilities.
  • Effective communication skills and the ability to work in a fast-paced environment.
  • Ability to pass an extensive background check in accordance with Kaw Nation Gaming Commission regulations to obtain a gaming license.
  • Self-motivated with the ability to work independently.
